Three Ingredient Chao Mac & "Cheese"

This version was a little less saucy than
I wanted it to be, but it was still amazing.

I am so in love with Field Roast's Chao it's not even funny.  Chao is, by far, the best tasting vegan cheese-like product I have ever eaten.  You can read more about my thoughts here.  With three ingredients, you can have a pretty tasty vegan version of mac & cheese.

Ingredients:

Chao Slices by Field Roast (any flavor, but I prefer using Original)
Pasta (I prefer Rotini or Elbow Macaroni)
Non-dairy milk (I used soy, but almond works just as well)

How-to:

You may notice that I don't have any measurements.  That is because I don't believe in using them unless they are absolutely necessary.  Anyway, boil the pasta according to the packaging.  I always add some salt to the water since pasta is pretty bland, but it's optional.  While the pasta is cooking, get your non-dairy milk and Chao out.  Generally, I use two Chao slices for one serving and 1/2-3/4 c. non-dairy milk.  Once the pasta is done cooking, drain it, rinse the pot out and add the non-dairy milk.  Once it starts to simmer add the Chao.  It may start out looking like a gelatinous mess, but as you stir it (I recommend using a whisk) the sauce will start to come together.  Once everything is incorporated turn the heat off and add the drained pasta to the sauce.  Mix up the sauce and pasta, and you're done!  Make sure to taste it.  If the sauce it too thick, you can thin it down with extra non-dairy milk; likewise, if the sauce is too thin, add some extra Chao.  As with any recipe, you can make this your own.  Add meat, meat alternatives, herbs/spices, etc. to customize you mac & "cheese".
